Publico - from fine dining to fun dining

If you had a profitable, busy, beautiful, well-reviewed and well-regarded luxury restaurant at a central location in a trendsetting capital city - would you close it down?

The F12 Group, one of Sweden’s most creative restaurant developers, had a very good reason to do just that with their eponymous flagship restaurant, F12. Owners Melker Andersson and Danyel Couet would not have risen to the very top of Sweden’s restaurant scene if they didn’t have great timing and a sixth sense for the trends and currents affecting the industry, and they felt that the writing was on the wall: changes were coming to the fine-dining segment, and those who would stay ahead of the curve had better pay attention.

Stylt have been watching global restaurant trends for years and for us too it is increasingly obvious that white-tablecloth luxury dining is on the way out. More and more diners seem to feel that the traditional fine-dining experience, with arcane booking procedures, waiters in tuxes, long meals taken in strict order, sober decor and astronomical prices, was restrictive, inflexible, impersonal and off-putting. 
But what would the luxury restaurant of the future look like? For the F12 Group, with an empty building on its hands, the question was a burning one, but they had an idea: mix the relaxed, welcoming ease of a Latin American canteen with gastronomy-level culinary ambitions. In short, great food in a relaxed environment. Could Stylt possibly help them realise this vision?

Are there moustaches in Mexico?

Publico is a celebration of Latin American beyond the clichés: forget sombreros, pillar cacti and sugar skulls. Here, it is the vibrant culture, the appetite for life, the flavours and the rhythms of Latin America that are in focus, and as the evening progresses, the plates are cleared and the music is turned up. Dancing on the tables is positively encouraged.

It’s a world away from stuffy old-school dining, both conceptually and in terms of design. The white table cloths, the monumental drapes and the elegantly muted colours are gone, and in their place there's worn wood, leather, rope, and wallpaper with dancing animals. 

Much of the interior is custom designed by Stylt. The worked leather lamps are handmade by a Mexican artisan saddler, and the rope chandelier have been commissioned from an Australian macramé artist. The patterned wallpapers and furnishing fabrics have been designed by Stylts own artists, and are full of playful combinations of Latin American plants and animals.
Relaxed, informal and welcoming, Publico represents the restaurant of the future, where the experience is adapted to the guest rather than the other way around, and where dining is all about having a good time, rather than showing off your good manners.
